Aruban Rice with Chicken - INGREDIENTS: 2 cups of rice 1 chicken leg 1/2 onion 1/2 green pepper 2 celery stalks 1 tomato 1 tbs chicken broth 2 tbs vegetable oil salt & pepper. METHOD / DIRECTIONS: Cook the rice. Put the chicken leg to boil with salt and pepper for 15 minutes. Once ready, shred the chicken from the bone. Fry the onion, green pepper, celery and tomato until it's golden brown. Add the shredded chicken and the cooked rice to the vegetables and mix thoroughly. SERVING SUGGESTIONS: Serve with a lettuce and tomato salad. On calm days, divers and snorkelers will encounter a multitude of fish there.Arashi reef (35'-40') This is a fascinating reef for novice divers. An abundance of brain coral, huge star corals, and sea fans are surrounded by parrot and angel fish. Antilla Wreck (60') The Antilla is a German freighter that was scuttled by the Germans in 1945. It is the largest wreck in the Caribbean (400' long) and was sunk when it was brand new. The Antilla wreck is excellent for penetrations because of its large compartments. Covered by giant tube sponges and coral formations, the Antilla is surrounded by lobsters and many kinds of tropical fish (many angel fish and yellow tails). It is also a great place for night diving. Malmok Reef (70'). Paths of widly spread leaf and brain corals abound at this bottom reef. The reef is noted for its huge lobsters as well as for the unusual numbers of sting rays. Giant barrel sponges - purple orange and green - cover the area. Rum Runner Wreck The Rum Runner Wreck was an old wooden fishing boat converted for tourist cruises. When the Rum Runner was no longer serviceable, it was sunk as a marine habitat. Now it is a home for fish, lobsters and turtles, with corals and beautiful anemones growing on the hull. Pedernales Wreck (35'). The wreck of the Pedemales is a paradise for beginning divers. It is an oil tanker torpedoed by a German submarine during the last World War. The wreck's several large pieces are spread out between coral formations; making visible the complete wreck cabins, wash basins, lavatories, etc., as well as the tankers pipeline system. The wreck was cut into three pieces by the US military during the war. The area around the wreck is known for its many types of groupers and its bounty of angel fish. Tugboat Wreck (40'-90') The Tugboat Wreck is one of the best diving places in Aruba. Dropping gradually through magnificent formations of brain, star and sheet coral, you arrive at the wreck of an old tugboat that now serves as home to a pair of green morays. On occasion spotted eagle rays and string rays can be seen very closely by. This dive area is popular favourite and a great spot for photography. Kantil Reef (40'-110') The Kantil Reef is a fascinating drop off, with gigantic boulders of brain and star coral, an abundance of massive formations of leaf and sheet corals, and plenty of huge sea fans and gorgoneas. There are incredible marine life encounters to be had here, with yellow tails, morays, groupers and manta rays. Eagle rays can also be seen here. It is an excellent place to dive for photography. Skalahein (15'-20'). This dive site is well known for its large population of barracudas and is excellent for drift-diving. You can spot here many great manta rays. This is a dive definitely to be logged. In the temperate waters around Aruba, a variety of Atlantic game fish can be caught year-round. Sailfish, white and blue marlin, wahoo, shark, barracuda, amberjack, kingfish, bonito, and blackfin and yellowfin tuna are abundant. Atlantis features a wide selection of rooms, from world-class luxury suites to moderately-priced rooms. Island Paradise Beach Village is a peaceful and picturesque place to spend your vacation. Set in five acres of tropical gardens and right next to a white sandy beach facing the Atlantic Ocean, this condominium resort is a cut above the rest. Although varying in sizes and interior decor, all of the condominiums are in superb condition with all of the amenities of life at close hand. A typical condominium will have a Queen size bed and full bathroom facilities, with linens and beach towels provided. All condos have a TV with cable access as an option. Telephone arrangements may be made but there is a public pay phone on site. Depending on condominium size, a full size kitchen stocked with a full sized fridge and freezer, coffee maker, blender, toaster, and pots and pans, complements a full sized dining area for enjoying meals and relaxation. Many of the buildings have glass fronted patios or balconies leading to the pool and barbeque area. The pool has showers and washers and dryers are available for units that do not have them included. A five minute walk will lead to a casino and a convenience store where guests can purchase most anything. Two miles from the resort is Basseterre, the capital of St. Kitts, where plenty of taxis at government fixed rates are waiting to ferry people about. Through the Island Paradise office on site guests may book catamaran trips, guided rainforest tours, scuba adventures, and many other activities. For guests who just want to escape and relax, there are plenty of beaches within walking distance where visitors may sit, relax, catch some sun, and enjoy a good book. Three hundred yards across the Paradise Island Bridge from Nassau's harbour, PARADISE ISLAND consists of 686 acres of hard-pack coral and wind-blown limestone oolite sand, and until the mid-1960s was Nassau's boat-building centre and supported a population of wild hogs and domesticated pigs. This former Hog Island also acted as a get-away for rich tourists, home to places like the posh Ocean Club , a 59-room Georgian charmer with a central courtyard garden and tennis courts. In 1967, when the Paradise Island Bridge linked the island with Nassau, a small airport was built at the island's eastern end, and Resorts International created a huge hotel complex catering to package tourists. With a recent second bridge now assisting the increased traffic flow, Paradise Island has become a hugely popular destination, with a spate of resorts, hotels, casinos and beaches submitting it to accusations of being overbuilt. Still, the island has some quiet backwaters, namely a marvellous north coast where pink sands meet the soft turquoise of the Atlantic Ocean. Thanks to the warm Gulf Stream currents and balmy trade winds, The Islands Of The Bahamas are blessed with a semi-tropical climate. Typical temperatures range from 70° to 80° Fahrenheit. Rarely does it climb above 90°F on a midsummer's day or fall below 60°F on a winter's night. While we can give no guarantees regarding rain, rainfall is most unlikely from November through April. Water temperatures range from the low 80s in the summer to about 74°F in midwinter. For people who like to eat out there are numerous restaurants close by for a variety of tastes and pocket books. Ottley's Plantation House is set at the north end of the island, amongst the sugar cane fields, this Plantation House is owned and run by a great family from the States. Here you are treated like Royalty, and the dining experience is not to be missed. Excellent Sunday brunch with Champagne to start with. Price quite high - but you are paying for above average settings and service. Bookings a must and evening meals are formal. The Nassau-Paradise Island of today: steel-drum music, take-it-easy attitude, to-die-for conch dishes cooked by both world-class chefs and the working folks the travelers, is a far cry from the Nassau that preceded it. Like other areas of the Caribbean, it has a romantic history-both centuries-old and decades-old-of foreign intervention, foreign occupation, piracy, slavery and smuggling. But Nassau's rich history is really the history of the Bahamas as a whole: one of resilience, one of pride. It all culminated in 1973, when the islands gained their independence from England, although they remain a part of the British Commonwealth, not unlike Puerto Rico, remaining a part of the United States, but with autonomy. The sheer size of these wrecks is amazing to see. Whether you are an experienced diver, a mere novice or considering an introduction to scuba diving, you would be hard pressed to find a friendlier destination. Try a powerboat adventure to one of the Out Islands for the day. Whether you're a first-time angler or an experienced sportfishing enthusiast, The Bahamas is well known among fishing circles as one of the great sportfishing destinations of the world. The calm, warm waters allow for minimal travel time to get to prime fishing grounds. Less than a quarter mile off Nassau's north shore you could be fishing on a pristine coral reef in 30 feet of water and a few miles further, you are fishing more than a mile deep. Along the south coast of Nassau / Paradise Island, the shallow waters and mangrove shores create the perfect combination for world-class fly-fishing. With so many fish in the sea, don't know where to start? Here are some ideas. Test your fishing knowledge with some light-tackle fishing. Take a half-day boat charter to the reef lines and shallow coral heads that provide some pole-busting thrills. You'll find the reefs plentiful with snapper, hogfish and grouper. You never really know what will strike your bait. Fly-fishing, also known as bonefishing, is a test of every angler's skill. It's best to hire a guide for a half-day excursion as they will have the keen eye to spot the school of what are often referred to as the gray ghosts. The south coast of Nassau has perfect flats and cays that are teeming with bonefish, permit and more. Deep-sea fishing is the ultimate in sportfishing. If you want to try your hand at some serious game fishing, half-day charters are available for catching big fish such as sailfish, wahoo and yellowfin tuna. The waters off Nassau are also famous for trolling for blue marlin. Bringing one of these incredible fighting fish into the boat is really a team sport between angler, captain and mate. It could take several hours and a lot of sweat to land one of these big critters. Offshore fishing charters mean there will be several guests on board. These boats will usually fish between the reef line and the deeper Tongue of the Ocean. The most prized catch of charter fishing in Nassau is the mahi mahi, also known as dolphin fish or dorado. It is one of the best-tasting fish and whether you like it grilled, baked or blackened, many of the island's restaurants and resorts will prepare your catch for some mouth-watering dining. A Bahamas specialty called shark fishing is sure to test your skills in a challenging fight with a hammerhead, tiger, bull or black-tip shark. These large toothy denizens of the deep range in size from six to 14 feet in length and weigh more than 200 pounds. Half- and full-day trips are available, but I recommend a full-day charter as you may cruise close to 20 miles offshore for some really great shark fishing experience. Most of my experiences on Nassau / Paradise Island have been confined to daylight hours: sunning on a sandy beach, snorkeling with stingrays, shopping for jewelry I don't need but can't live without. When night comes around, I'm usually content to eat at one of my favorite restaurants (coriander-crusted beef carpaccio at Seafire Steakhouse in Marina Village or grouper almondine cooked to perfection at Luciano's of Chicago), then retire early to rest up for another day exploring the island. On this trip, I was determined to find out what my favorite island gets up to after dark. It didn't take me long to realize that yes, the nightlife around here is just as hot as the weather. Here are some of my top picks. No matter what you're in the mood for, The Chase Lounge probably has it. The poolside setting at the Nassau Palm Resort boasts an impressive collection of spirits: imported and Bahamian beers, fine liquors, cordials and cognacs, and almost every type of frozen tropical delight. Paradise Island's only native waterfront restaurant, The Columbus Tavern, is an intimate, shorts-and-sandals-type establishment overlooking Nassau Harbour. Choose from its impressive array of tropical drinks or extensive wine list. The happy hour crowd enjoys free conch fritters. If you crave a steady beat with your drinks, the Oasis Lounge has some of the best lounge tunes on the island. Listen to native singers entertain with a variety of island music such as lively calypso. From local favorites like conch salad and fried snapper to haute Continental cuisine, our dining options reflect the fusion of our many cultural influences. All over the island, chefs start with fresh-from-the-sea ingredients, including conch, grouper and snapper. They draw from the spices and techniques of our British, Spanish and West Indian history. And it all comes together in a way that suits the mood of the place, whether it's the refined, old-world ambiance of Graycliff Restaurant or the elbows-on-the-table feel of the Fish Fry. But wherever and however you dine, don't leave without cracking into some conch. Bahamian cuisine is a product of the country's rich ethnic heritage, a never-bland gumbo of Spanish, West African and British cultures, stewed until perfectly cooked. In Nassau/Paradise Island, the natural bounty of the sea is on the menu for every memorable dining experience, from the simplest down-home lunch to an upscale dinner enjoyed under a blanket of stars. You'll want to dress to impress for an evening at Dune, New York chef Jean-Georges Vongerichten's stunning Asian-fusion restaurant at the posh One&Only Ocean Club. Located in a whitewashed plantation setting overlooking a private section of Paradise Island's 3-mile long Cabbage Beach, Dune features starters like the Black Plate for Two, a selection of quail grilled with Thai spices, crab spring roll and shrimp satay presented like artwork on a lustrous ebony platter. The menu also includes exotically spiced grouper, rack of lamb served with cucumber mint relish and a mammoth veal chop spiked with sage, papaya mustard and Madeira, enjoyed in the dining room or outside on the patio, accompanied by a soundtrack of breaking waves. At Cafe Martinique, chef Jean-Georges Vongerichten recreates the original cafe made famous by its appearance in the 1965 James Bond classic Thunderball. Located in the colorful Marina Village at Atlantis, Cafe Martinique is reimagined in a contemporary setting by New York designer Adam Tihany, with dramatic features including a wrought-iron birdcage elevator and a dramatic mahogany staircase. The elegant French menu includes dishes like lobster thermidor, steak au poivre and duck a la orange. In general the weather is good all year and the trade winds ensure that the temperatures remain relatively mild. There is little variation in temperature year round, but the coolest months are December to February, while the hottest are June to August. The rainy season extends from May to November when there is a slight chance of hurricanes. Peak season is between December and April. Generally the northern and western islands, including New Providence Island, are cooler than the southern islands. Nothing can prepare one for the sight of the Atlantis, an enormous hotel/resort/aquarium/ water park modeled after the legendary sunken city. The rest of Paradise Island isn't at all shabby either. In fact, it is a veritable man-made oasis, built over what used to be a lackluster patch of ground known as Hog Island. The first resort to draw people to the island was the venerable Club Land'or. While this tiny club is very much in the shadow of the Atlantis, it still has many loyal fans. Golfers should check out the Clarion South Ocean Resort and Golf Club, while wealthy travelers desiring quiet will appreciate the Sheraton. Shopping on Paradise Island is either very expensive or not very interesting. The Crystal Court in the Atlantis features a dozen of the world's best and most expensive designer boutiques. On the other end of the spectrum, Paradise Plaza and Hurricane Hole have a number of shops that sell inexpensive beach gear and souvenirs. Fine dining is everywhere, most notably at the Blue Lagoon and at Fathoms. For a family dinner, Anthony's is a good choice. Choosing a daytime activity is easy: the beach is everywhere, and it's gorgeous. Many aquatic excursions depart from the Paradise Island Port instead of (or in addition to) Nassau Harbor. Paradise Island is stunning in some parts, lovely in others, and in some...well, it's not finished yet. There is constant construction and even more constant renovation as hotels strive to match up to the world-famous Atlantis. This is easily the most expensive and tourist-oriented place in all of the Bahamas, but no one would deny that it's a lot of fun. There's no bus over the Bridge. Drive, or take a cab or bus to the foot and walk. Ferry boats (water taxis) can take you to Paradise Island while at the same time giving you a waterfront view of the beautiful island, houses and the Nassau Harbour. Tickets can be purchased from the tour desk at Festival Place and at Woods Rodgers Wharf, which is directly beside Festival Place. Round-trip tickets from Nassau to Paradise Island cost $6 per person. The duration of the trip is approximately 10 minutes each way and the boats leave the wharf every half hour on the hour. Private charter trips can also be arranged from Nassau to Paradise Island, Rose Island, Pearl Island and Black Beard Cay. Charter trips are negotiable. In the late '60s, Norwegian millionaire Torolf Smedvig fell in love with Peter Island and purchased most of the land. He shipped a set of luxury A-frame chalets to the island from Norway, and assembled them on Sprat Bay along with a clubhouse and marina, which became Peter Island Resort. Smedvig operated the British Virgin Island resort until his death in the late 1970s, at which time two Michigan-based entrepreneurs purchased it. Lobster Salad - INGREDIENTS: 2 tablespoons fresh lemon or lime juice 1/2 cup mayonnaise 12 ounces cooked lobster, cut into 1/2-inch pieces 1/4 cup diced cucumber 1/4 cup chopped onion 1/4 cup chopped celery 1/4 cup chopped green pepper Salt and pepper to taste Dash hot pepper sauce. METHOD / DIRECTIONS: Combine the juice and mayonnaise. Gently toss with remaining ingredients. Chill. Serve in Lobster tails or on salad greens. Garnish with lemon slices if desired. To make the guests quickly feel at home, they are invited to spend some time on an island orientation tour. Beginning at 11 a.m., the informative tour, which is often led by concierge Hugh Benji Benjamin, takes guests around our 1,800-acre private island. On the island for 30 years, Benji knows his way around.
